Mary-Clare Horgan has always had a love of cooking from a very young age.

“Graduating from the well-known Ballymaloe Cookery School in December 2000, she began her career in cooking by working for one of the top Ski companies, ‘Ski Scott Dunn’. During her season in Zermatt, Switzerland, she catered for private chalet groups for up to 25 people.”

After her season in Zermatt, Mary Clare travelled to Australia, where she spent 12 months travelling and working in various interesting cafés and delis. Back from her travels, she was offered the opportunity to work in Cork’s well known Man Friday Restaurant. During her time here, she became fixated with the idea of opening her own establishment. While searching for her premises, she gained great experience working in The Exchange Bar, taking care of their daytime menu. Having grown up in Douglas, it was a trip back to her childhood memories when these premises, where as a child she attended Art & Drama classes, became available.
